Today you will ear like a local during your cycling day and a cooking class excursion. Our Food and Wine cycling tour includes a cooking class on traditional Pugliese cuisine. A lesson blending flavours and taste and genuine ingredients. Your lesson will be held in a countryside setting in a Tenuta or Agriturismo. You will become an expert on how to make Orecchiette which is Puglia’s signature dish.

  Your morning starts departing from the village of Gallipoli, a fishing town located in southern Puglia, overlooking the Ionian Sea. In a few kilometers we reach Alezio (ancient Messapian city, where there is an interesting museum on pre-Roman civilizations) and then Sannicola. Cycling on secondary country roads, among olive trees and dry stone walls, we reach our destination a family run agriturismo  where the cooking class will take place.
  Your lesson will be based on products that are harvested directly from the family garden. Pick the vegetables that you will cook during your lesson. The first part of the lesson is the preparation: “pitta di patate” (a kind of potato gateau, with a stuffing of tomatoes, olives, capers, onion and tuna), “pittule” (some fried dough balls), filled with tomatoes and capers, or just plain to taste with honey). You will learn the art of hand=made orecchiette. A fresh pasta that is typical and popular in Puglia.  This pasta is shaped like an ear, prepared with the use fingers and a knife). Of course a meal without a dessert. You will prepare “pasticciotto cake” (a cake made with short crust pastry, filled with chantilly cream); these are some of the dishes that you will prepare. You will enjoy lunch with what you have prepared with the entire family, where they will fill you in on life on that part of Puglia.  On your return ride you will have the possibility to visit the baroque city of Galatone and the “radio museum” of Tuglie. The route is easy and suitable for everyone.
